Fresh mushrooms sit on a mesh screen inside a clear 6.5-quart chamber, above two desiccants that pull moisture out of the air until the mushrooms are cracker-dry. Because the chamber is sealed, it works even in a humid room, and the desiccants recharge in the oven so you can use the kit again and again.
